### Pakora (Fritters)

#### Ingredients:

- 1 cup gram flour (besan)

- 1/2 cup onions, finely chopped

- 1/2 cup spinach, chopped (optional)

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon coriander seeds

- 1/2 teaspoon ajwain (carom seeds)

- 1/4 teaspoon turmeric powder

- 1/4 teaspoon red chili powder (adjust to taste)

- Salt to taste

- 1/4 cup water (or as needed)

- Oil for frying


  • #### Instructions:

1. Prepare the Batter: 

In a large bowl, mix the gram flour, chopped onions, spinach (if using), cumin seeds, coriander seeds, ajwain, turmeric powder, red chili powder, and salt.

2. Add Water: 

Gradually add water to the mixture and stir well to form a thick batter. The batter should be thick enough to coat the back of a spoon. Adjust the consistency by adding more water if needed.

**Fry the pakoras:** 

Heat oil in a deep frying pan over medium heat. Once the oil has heated, carefully drop small portions of the batter into the oil using a spoon. Fry the pakoras until they turn golden brown and crispy. Once cooked, drain them on paper towels.



### Kadhi (Yogurt-Based Curry)

#### Ingredients:

- 1 cup yogurt (dahi)

- 2 tablespoons gram flour (besan)

- 2 cups water

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- Salt to taste

- 2 tablespoons oil or ghee

- 1 teaspoon cumin seeds

- 1 teaspoon mustard seeds (optional)

- 2-3 cloves

- 2-3 green cardamom pods

- 2-3 dried red chilies 

- Fresh coriander leaves for garnish

1. Prepare the Kadhi Mixture: 

In a large bowl, whisk together the yogurt, gram flour, turmeric powder, red chili powder, and salt. Gradually add water to the mixture, stirring continuously to avoid lumps.


2. Cook the Kadhi: 

Pour the yogurt mixture into a large pan and cook it over medium heat, stirring continuously. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 10 to 15 minutes or until the kadhi thickens slightly.


3. Tempering:

 Heat oil or ghee in a small pan for tempering. Add cumin seeds, mustard seeds (if using), cloves, green cardamom pods, and dried red chilies (if using). Let them sputter and release their aroma.


4. Add Tempering to Kadhi

 Pour the tempering mixture into the kadhi and stir well. Simmer the kadhi for another 2-3 minutes.

Serve the Kadhi Pakora hot with steamed rice or roti. Garnish with fresh coriander leaves.

Consistency of Kadhi: 

The kadhi should be slightly thick but still flowy. If it becomes too thick, adjust the consistency by adding more water.
