## Ingredients

- 3 cups boiled rice

- 1 cup boiled and shredded chicken

- 1 cup finely chopped capsicum

- 1 cup finely chopped small cabbage

- 2 carrots, chopped

- 1 cup chopped spring onion (separated into green and white parts)

- 1 egg, beaten

- 1/2 cup oil

- 1/2 cup chicken stock

- 1 tsp oyster sauce

- 1 tsp white vinegar

- 1 tbsp salt

- 1/2 tsp Chinese salt

- 1/2 tsp black pepper

- 2 tbsp soy sauce

## Instructions

1. Heat oil in a pan.

Take 1/2 cup of oil and heat it in a pan. Add the white part of the spring onion and fry until golden brown.

2. Add vegetables and chicken:

Add chopped carrots and boiled and shredded chicken, and stir-fry for a few minutes.

3. Add rice and seasonings:

Add 3 cups of boiled rice, soy sauce, oyster sauce, salt, Chinese salt, and black pepper. Mix well.

4. Add egg:

 Beat an egg in a separate bowl and fry it in a pan. Cut it into slices and add it to the rice mixture.

5. Add chicken stock and green onions:

 Add 1/2 cup of chicken stock and the green part of the spring onion. Stir-fry for a few minutes.

6. Serve:

Serve hot, garnished with additional spring onions if desired.
